In Morocco, couscous is not only the national meal, but a treasure. Traditionally, everyone in the Kingdom has it as their meal every Friday. Whether enjoyed by hand or by spoon, at home or in a restaurant, this tradition is shared and loved by all. Coming to America, though, I noticed that my favorite dish wasn't the same. It's supposed to be cooked for hours using a very particular method. It involves an elaborate ritual of moistening, steaming, more moistening, kneading with olive oil, more steaming, more moistening, more steaming. Usually people take shortcuts, but not tonight. Tonight I will cook using the same recipe and style that has been passed down for generations. Come join me for a festive evening and relive couscous as if for the first time.
